Today’s Tasty Tuesday offering is a recipe from Top Secret Recipes’ website. We have had this recipe for a long time, and it’s a huge hit in our family. The boys love it, I love how it’s virtually fat-free (all those chips you eat with the dip add fat, unfortunately!), plus it is very quick, easy, and incredibly tasty.
Instead of using the jalepeno peppers and pepper juice in the recipe, I substitute a couple of spoons of mild salsa.I also delete the cayenne paper. You can use plain canned pinto beans, or the yummy seasoned canned pinto beans. This dip is very addicting!
Top Secret Recipes’ Frito-Lay Bean Dip (from http://topsecretrecipes.com)
1 15oz. can pinto beans, drained
4 bottled jalapeno pepper slices (nacho slices)
1 tablespoon juice from bottled jalapeno slices
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1/8 teaspoon cayenne pepper
Combine drained pinto beans with other ingredients in a food processor. Puree ingredients on high speed until smooth. Cover and chill for at least an hour before serving.
Makes 1 1/4 cup of dip.
